§ THE KITCHEN
A restored dumbwaiter, open kitchens, and a brigade that treats the pass like a stage. Here is how a plate reaches your table.
The dining rooms were built around a modern dumbwaiter — a working piece of theatre that carries plates between the kitchen and the pass in full view of the room. It is the reason a table here feels closer to the cooking than the square footage would suggest.
One brigade runs all five rooms, and the menu it writes moves across three continents in a sitting: an Ottoman mezze to start, a coconut-and-lemongrass broth for the main, a cardamom tuile to finish. Classic favourites sit beside dishes the chefs are still working out.
Produce leads the menu, not the other way around. Leaves and herbs come from the kitchen garden a few steps from the pass; fish is line-caught, beef is Highland-reared, and what the markets have that morning decides the specials board.
A restored lift between kitchen and pass — dinner service you can watch happen.
Asian, European and African techniques on the same card, changed with the season.
Herbs and leaves cut metres from the kitchen; the market decides the specials.
§ WHERE TO SIT
The same kitchen, three very different rooms — pick the one that fits the evening.
The Rooftop Terrace: small plates, a long drinks list and the city lights coming up over Nakasero.
Manutea Wine & Whisky Lounge: low light, a coravin pour, single malts and a cheese board that lasts the evening.
Equatoria opens onto a terrace under the trees — an inviting setting for breakfast meetings and long lunches.

reservations@eminpasha.com§ GOOD TO KNOW
Dress code, dietary needs, corkage, children and private hire — the questions the reservations desk answers most.
Yes. Vegetarian and vegan options are on every menu, and the kitchen will adapt dishes for allergies, coeliac, halal and other needs. Tell us when you reserve so the brigade can plan — 24 hours' notice for the chef's table.
Children are welcome at Equatoria all day, and earlier in the evening on the Rooftop Terrace, with a children's menu and high chairs available. The lounge is better suited to older children and adults.
Walk-ins are welcome at Equatoria and the Rooftop Terrace when there is space, but sunset tables and weekend evenings fill quickly — a reservation is the safe bet, and the only way to hold a table on the roof.
The reservations desk can confirm current corkage terms and any per-bottle limit when you book. The Manutea list is deep enough that most guests do not need to.
Yes — a chef's table for up to eight, a private dining room for up to twenty-four, or the whole rooftop for a standing reception. Start with the reservation form below and note the occasion and numbers.
