Bursts with dried apricots and pineapple, with a hint of vanilla and some typical Chenin honey notes on the long lasting finish.
Jordan Chameleon 2007

Reserve this wine for imaginative dishes with overtones matching the spicy pepperiness of Shiraz, such as oxtail and lamb.

Champagne
Moet & Chandon Brut NV
Champagne's signature bubbles were included by accident! Back in the 1700s, wine was supposed to be flat, like most wine is today. Bubbles were an error in the process, and the monk Dom Perignon worked hard to remove them. Instead, he found methods of blending and clarifying the drink, and soon it was sought after by French aristocracy. The rest, they say, is history! This example from Epernay in France, is deliberately made in a soft, light and fresh style ensuring consistency of flavour. Concentrations of candied fruit, ginger bread and vanilla. Enjoyed at any time of the day or before any meal time.
Sparkling Wines
Villiera Estate Sparkling Wines – Cap Classique
For our Tradition slighty unripe healthy grapes are pressed very gently using a Champagne pressing program. Only the cuvee (best quality juice) is used in the blend. After blending yeast and sugar are added for a secondary fermentation in the bottle which takes about six weeks, producing CO2. The sparkling wine is matured in contact with the lees for about 18 months. With age the wine softens in flavour, maintaining its sparkle, giving a fulfilling balance of age and fruit.
Tradition Brut NV
This classic displays the full, balanced yeasty complexity synonymous with a wine made in this style. The wine retains its fresh racy zestiness that is a result of crisp acidity and rich fruit. “Cap Classique Trophy” winner, SAA Awards 2007.
Tradition Rosé Brut NV
Joyful, rich pink colour, vivacious cascading bubbles and the full rich flavour of Pinot Noir combined with the elegance of Chardonnay and the uniqueness of Pinotage providing the colour. This is the Tradition Rose, rich in flavour with a long finish.
